At the title screen, press Square, X, Square, X, Circle, Triangle, Circle, Triangle, Up, Down, Left, Right, Select. If you entered the code correctly, you will hear the sound of the bell. Now highlight the seventh wrestler listed (Lance; Kensuke Sasaki in the Japanese version), and press Select.

Sparrow secret wrestler (Great Muta in Japanese version)
